Who does not like pizza ;)? Since my childhood till now, pizza remained my favourite meal although not the most healthy habit ;). In our house we all love pizza so it was time to try to make a healthier vegetarian version.
I replaced the white flour with spelt whole wheat flour and for stuffing, I used mostly vegetables and little amount of feta cheese that you can, but don’t have to use. The dough is really soft and the whole process is very easy and quick.
Feel free to experiment with different stuffing options ;).
- 28 Tbsp of spelt whole wheat flour
- 1/2 yeast
- 1/2 Tsp of salt
- 1 Tbsp of olive oil
- Homemade tomato sauce, mushrooms, pepper, olives, feta cheese, arugula salad
In the lukewarm water add 1/2 yeast and 3 Tbsp of spelt whole wheat flour, mix it and leave it for 10-15min.
Put 25 Tbsp of spelt whole wheat flour in a bowl and make a hole in the middle. Pour 1 Tbsp of olive oil, 1/2 Tsp of salt and pour the yeast mixture in it, mix it slowly and add water if necessary till you get a soft dough. Leave the dough to rise.
Transfer the dough to a floured surface and don’t knead the dough again. Roll the dough and place it in baking pan on greaseproof paper. Add tomato sauce, a little bit of olive oil, chopped mushrooms, pepper, feta cheese and olives. I baked the pizza on 180°C for 15-20min. After the pizza is baked add chopped arugula salad.
Note: The amount of dough is enough for 2 thin pizzas or 1 thicker.
