As a fan of savoury pastries, today i decided to experiment and make whole wheat kale and feta cake for lunch. It is quite easy to make and there’s not much that could go wrong:).
All ingredients need to be put in a bowl, mixed until combined and then baked. It is very soft and light. Very often, we eat it for lunch together with the pumpkin soup.
- 3 eggs
- 100 ml oat milk
- 180 g whole wheat flour
- 1 Tbsp of organic baking powder
- 200 g feta cheese
- 150 ml of coconut oil
- chopped kale or spinach
Cover a baking sheet with greaseproof paper. Wash and chop the kale or spinach.
In a bowl beat the eggs, organic baking powder and salt. Then add whole wheat flour, oat milk and melted coconut oil.
When the mixture is combined add the crushed feta cheese and the kale or spinach.
Pour the mixture into the baking sheet.
Turn on the oven 180°C and bake the cake for 45 minutes.
